homemade oreos.

I have been doing a lot of cooking and baking lately, trying out new recipes. This homemade oreo recipe from my friend, April, is fast becoming one of my new favorites. The good thing about it is that I am using up the cream cheese I just bought. :)

Here's the recipe:

Cookie:
1 box devils food cake mix
2 eggs
1/2 cup oil

Mix ingredients together then roll into balls and bake at 350 degrees for 8 minutes. Let cool.

Cream Cheese Filling:
1 stick butter
1 package cream cheese
4 cups confectioner's sugar
1/2 tsp vanilla

Cream butter, gradually add cream cheese, sugar and vanilla

Once the cookies are cool, add filling to one cookie, then use a another cookie in similar size to complete the oreo.

I also experimented with a peanut butter cream cheese filling. Super yummy!

1/2 cup peanut butter
2 package cream cheese
5 tablespoon confectioner's sugar
1/2 tsp vanilla
